It all started with a summer job under Patrick Guilbaud...

BYSAM is my latest adventure in food. I have enjoyed 30 years exploring my passion for food. While still at school I spent my late teenage years flirting with cooking under the guidance of Patrick Guilbaud at whose suggestion I went to train in Ballymaloe with Darina Allen in 1989. Having jumped out a few windows to enjoy the late night hospitality I was officially released and found shelter in Polo One with the soon to be eponymous Johnny Cooke, then sojourning in the virgin fields of Kilmacanogue with Leylie Hayes at Avoca. Returning to my natural urban habitat and taking time out of the heat of the kitchen I butterflied front of house managing the 'Expresso Bars' in Shelbourne Road and Saint Marys Road. Finally making the jump to running my own ship opening NOSH in Dalkey in 1999 with my sister Sacha. After 12 buoyant years it was time to go it alone and bring my rock and roll kitchen skills out of retirement working as a private chef for U2 in their recording studio. During this time I decided to put my own show on the road and started BYSAM, my highly bespoke catering company.
